Pumpkin Cookies

She loves me!  She really loves me!  Even though I didn’t beg, plead or grovel for it, City Girl sent me a new recipe!  And to make it even better, I have totally been craving pumpkin-y things lately.  The weather is cooling down, days are getting shorter, football has started.  Bring on the autumn flavors!  Here’s CG:

I love this time of year….It gets down to 70 degrees at night…. Fall always makes me think of one food…pumpkin.  I LOVE pumpkin.  Put it in a latte (yes, pumpkin spiced lattes are at Starbucks), put it in a pie, put it in a cheesecake (pumpkin cheesecake at the Olive Garden) or put it in a cookie.  I love it all!!
This recipe is SO easy and even though they look like something that would not taste good (pumpkin just isn’t a pretty color) these cookies are amazing.  More like a muffin than a cookie…..
 
Okay, here is my latest recipe for you…
 
Pumpkin cookies

• 1/2 C butter
• 1 C sugar
  -cream together then add 1 egg. mix again.
   
  Add:
• 2 C flour
• 1 tsp. cinnamon
• 1 tsp. baking soda
• 1/2 tsp. salt
• 1 tsp. baking powder
   
  Add:
• 1 C pure pumpkin 
• 1 tsp vanilla

Stir well (you could add some kind of chopped nut or rasins, but ewww….I don’t like either of those).
 
Drop by the spoonful onto greased cookie sheet.  Bake at 350 for 13-15 minutes.
 
***You can also make a light frosting from 2 T melted butter, 2 C powdered sugar, and lemon juice*****
 
I don’t put the frosting on either…..
 
I get about 30 cookies from this recipe….at about 2 pts a cookie, although I hardly ever eat just one at a time…..

——->Quick note to you Andrea….I will not be offended if you don’t use this picture…..the cookies kinda look like piles of baby poo……but I swear they taste great. Pumpkin doesn’t really photograph well….
