Grilled Tropical Fruit Kabobs

Okay, I bought a pineapple because they were on sale and yesterday, I was standing in the kitchen staring at it.  So, I had a pineapple.  A pineapple.  What could I do with it besides cutting it up and eating it?  I walked away and let my mind wander for a bit until I remembered a grilled pineapple desert I had in a restaurant a few years ago.  I could recreate that, right?  Well, at least something somewhat similar.  And this is what I came up with.  Yum!

  • 1/2 pineapple, cut into large chunks
  • 2 large bananas, cut into large chunks
  • 1 1/2 Tbs. brown sugar
  • 1 Tbs. dark rum
  • 1/2 Tbs. light butter, melted (I used I Can’t Believe It’s Not Butter Light)
  • sweetened coconut for garnish, optional

Alternately thread pineapple and bananas onto skewers.  (If you are using wooden skewers, soak them for at least 20 minutes to keep them from burning.)  Mix together brown sugar, rum and butter and brush onto kabobs.  Place kabobs on a medium-hot grill.  Continue to brush with sugar mixture and turn as needed until grill marks appear and fruit is warmed through, about 8 to 10 minutes.  Remove from grill and sprinkle with sweetened coconut if desired.

Serves: 4  WWP: 2  This does not include coconut.  By the way, speaking of coconut, here is what they look like with the garnish:
