I received this recipe from a co-worker a few years ago. His wife had just been diagnosed with diabetes and they were looking for ways to cut down on sugar. He told me that this recipe was very popular with his family and I can see why. It’s a great alternative to the regular creamy coleslaw (which I also love!) and (drum roll, please….) it’s 0 points! Yeay!! Let the eating begin!
- 4 cups shreded cabbage (I use packaged coleslaw mix)
- 1 medium red bell pepper, chopped
- 2 green onions, chopped
- 1 cup frozen corn kernels, thawed
- 1/2 cup rice vinegar (if you can’t find rice vinegar, I’ve used regular white vinegar and it still tastes great)
- 1/3 cup Splenda
- salt, to taste
- pepper, to taste
- 1 Tbs. finely minced jalapeno pepper (I’ve made it with this and without–still great!)
Mix vinegar and Splenda (so much fun–it’s like a science experiment!). Toss with other ingredients. Let sit several hours before serving.
